what's for dinner?

What I'd really like to do is share some pictures from Christmas but Blogger is being a pain in the butt and won't let me upload any photos.  So, in an attempt to get back in the habit of menu planning and blogging, I thought I'd post this week's dinner menu.  Eating healthy is so much easier when I have a plan. Otherwise, it's 8pm before I realize everything is frozen and we end up eating takeout. 

I've probably mentioned this before but I typically plan four or five meals per week to allow for dinner out, leftovers, and the occasional "I don't want to cook tonight, let's have PB&J" situation.  Here's what we're having this week:

Turkey Zucchini Burgers with Oven Fries & Veggies  - Don't be scared of adding zucchini to your turkey burgers. You can't taste the zucchini but it keeps the super lean turkey from being dry. They're delicious!

Turkey Sausage Pizza with Salad - Homemade pizza is my standby, easy to throw together meal. Sometimes I have the Pioneer Woman's pizza dough in the freezer, sometimes I use the Pillsbury crust in a can (making it not quite homemade, but whatever. It tastes fine.). As long as I've got cheese, I can make a pizza using whatever else I find in the fridge. It's a great way to use up leftover meat & veggies.

Chicken Tostadas & Salad with Cilantro Pepita Dressing



The Cilantro Pepita Dressing is a copy cat of the El Torito Mexican Caesar Salad dressing, for those of you who know El Torito.  I cannot get enough of this stuff.  When it's in my fridge, I find myself looking for things to dip in it between meals.  Veggies and chips are good options but my finger works in a pinch.  :) The recipe I've linked to is halved from the original recipe but it still makes a lot of dressing. Share some with a friend. They'll thank you.

I am so glad you are doing this. I need more meal plan ideas. Thanks for sharing. I also do the loose, 4/5 meals a week....

Hi there! Does your little one usually eat what you eat or do you make something separate? I always ask people for Toddler ideas (I have a 15 month old) and they say "she eats what we eat!" but my daughter wont eat everything that we eat. I made chicken piccata the other night and just cut up the chicken (before adding the lemon) and gave her her noodles just buttered. She ate maybe 3 bites. So I'd rather just make her something separate i know she'll eat! :)

Those turkey burgers sound great! I have the same question as the above blogger..will Blaire eat the burgers? Im switching Mary Clare over slowly so I love new healthy menu options - Thanks!

Those turkey burgers....yum.... you had me at zucchini!

And seriously - I cannot handle how big Blaire has gotten! She is absolutely precious. If she ever wants to meet a super sweet, Southern gentleman, Jackson is totally willing to meet her at your local Chick-fil-a for a 1st casual date. ;)
